Appam
INGREDIENTS:-
- Raw rice – 1 1/2 cup
(one &half cup)(soak in water for 4 – 5 hours) - Grated coconut – 3/4 cup
- Salt – 1 tsp
- Sugar – 2 tsp
- Baking soda – 1/4 tsp
PREPARATION
Drain the rice and grind it with coconut in a mixed grinder. Add water little by little for making a smooth batter.
Take 1/4 cup of the batter and 3/4 cup of water. Mix it and place it on very slow flame stir it continously to make a thick batter . Turn off heat and keep it on room temperature. Add this to the remaining batter and mix well. Add water if necessary. The batter for should be thick pouring consistency. Place this batter for fermentation overnight.
At the time of preparation add salt & sugar and mix well. Heat the Appam pan and pour a ladle full of batter on the center of the pan and lift the pan and twirl the batter in a clockwise. Place the pan on stove and close with a lid. it need 2 1/2(two & half) minutes to bake. Use a flat spatula for lifting Appam.
